Is this the apprenticeship for you?

Love working with food and working with a bigger team? Chef de Parties are also known as station chefs or section chefs as they manage one particular area of the kitchen to ensure dishes go out on time and are up to scratch. In larger kitchens, the Chef de Partie may manage a small group of chefs.

On this Level 3 Chef de Partie apprenticeship, you’ll get first-hand experience of this style of working, learning in real-time in the kitchen. Learn how to prepare and master the dishes to a high standard, whilst keeping your area clean and tidy and working as part of the larger kitchen too.

What knowledge and skills will you develop?

  • Advanced preparation skills and techniques for meat, poultry and game; fish and shellfish; vegetable and vegetarian dishes; dough and batter; hot, cold and frozen desserts; biscuits, cakes and sponges; and paste and patisserie products
  • How to interpret trends and customer requirements to review and refresh the menu
  • Waste minimisation
  • How to use available technology
  • Stock-checking
  • Food safety standards
  • People management
  • Transferrable skills such as teamwork, working under time pressure, and communication

What do you need to apply?

Your employer will set their own entry requirements.

How will I be assessed?

There will be a combination of multiple choice and written exams, portfolio work, interviews and practical assessments.

The End Point Assessment (EPA) takes an overview of the apprentices’ competence. This is undertaken once you have developed all the knowledge, skills and behaviours that you have gained during your course.
